Seppo Salminen is a Professor, Director of the Functional Foods Forum, Faculty of Medicine, University of Turku, Turku, Finland has published more than 400 scientific publications in food and health and food safety. He has been a forerunner in intestinal microbiota studies and in probiotics and has served for 9 years in the European Food Safety Authority (EFSA) and the Panel on Dietetic Products, Nutrition and Allergies (NDA) focusing on novel foods and foods and health claims. He has received several international prices for his work. He is also a member of the Finnish Academy of Sciences and Letters and serves currently as vice president of the ISAPP (International Sciencific Association of Probiotics and Prebiotics).
